End user/member - The ability to download their content and save to a file on their system. Could be used on all products you offer.

I'm not sure I understand the benefit for the user to download their content. Is this the equivalent of printing something so they can use if when they are offline?

Yes, and also send as a file.

Any idea on what kind of file would it be? A PDF perhaps? Otherwise I'm not sure I know of a file format that we could easily encapsulate all the data captured plus pictures.

Yes, I was thinking of PDF format. Something everyone can work with.

If PDF is the desired format that is already somewhat supported now. I'm not sure how you print to PDF on Windows machines but on Apple machines its just an option under the print dialog.

I did a little digging and found the following free PDF Writer utility for Windows machines that should support this need. If you included information on saving showcase information to a PDF for both Windows and Apple machines everyone would then be able to take the information with them.
